Cameo Apple, Jicama and Orange Salad
So it was what passes for hot here today and I was in the mood for something light and fruity. Also, I wanted to make sure we were getting our fruits and veggies in and this salad was the way to do it. Remember that orange, I zested when I made the Bran Muffins with Golden Raisins? It was just sitting in a plastic bag looking all scrapped and pathetic, so I peeled it, sliced it into strips and threw it together with some jicama and apple. For dressing, I squeezed a couple of the orange segments dry and used the juice that was left from the baby lemon. Fruit Salad on the cheap!

I've also fallen back on some old favorites for lunch entrees. The first one is super cheap, it's Bean Burritos, Ill be posting the recipe with a couple of variations next week. A pound of pinto beans will yield about seven and a half cups of cooked beans which will make for a really generous amount of filling. Obviously, we won't be able to eat all twelve this week but I'll freeze the ones we don't get to.

Again, I wanted to make sure we were getting either a fruit or a vegetable with every meal, so this was a cheap way to add some veggie goodness to the mix. I've also got some leftover scallions we can use.
Our second lunch choice is going to be egg salad with homemade mayonnaise. Our budget wouldn't allow me to pay three bucks for a jar of the commercial stuff and making it at home in the food processor is really quick and easy. I'm planning on wrapping the egg salad in our remaining tortillas with some lettuce.
Egg Salad
10 eggs ( 9 for the salad and one for the mayonnaise) 2.65

6 ounces of canola oil 1.19
dry mustard .15
baby lemon .25
Total 5.24 for approximately 5 cups of egg salad
So with our lunches accounted for and some extra fruit and veggies thrown in the remaining money to spend on groceries this week is $22.58.


That looks refreshing! I don't think I've ever had Jicama. I love fruit salad though. The egg salad looks delish too!

Everything looks so yummy. I think I'm going to copy you and have fruit salad & egg slad sandwhiches for lunch. I've got everything I need on hand, to whip these both up. Thanks for the inspiration.
